Why is Nezuko immune to the sun?
The first possible reason is that Nezuko hails from a family that uses Sun Breathing as Hinokami Kagura. Being generationally connected to a community that dances as an offering to the sun gods may have resulted in Nezuko’s immunity to the sun.
Another theory suggests that it may have been her mutated genes. Although Muzan Kibutsuji turned her into a demon, her demon genes might have mutated to make her resistant to sunlight. This can be extended to a user articulating that Nezuko might have manipulated her physiology. Not only does she learn to control her urges to feed on human flesh, unlike other demons who crave it, but she also exhibits extraordinary blood demon art while fighting Daki.

Within the same Reddit thread, a fan mentions that Nezuko’s ability to walk in daylight comes from the sheer act of love. Besides retaining her humanity, she decides to sacrifice herself. She walks in daylight to save Tanjiro while fighting Hantengu, knowing she would burn if she did that. By doing so, she possibly breaks the demon curse.
Irrespective of how Nezuko could conquer the sun, she is a special demon. Unlike other demons, she is kind, loving, and selfless. Being the complete opposite of what Muzan imagined his demons to be, she naturally breaks the curse.
